Berries and Chia seed, No cook Jam
How do you make a lovely yogurt parfait without a syrupy sugar loaded berry sauce?
With refrigerator jam off course!
This is a quick and easy method with zero cooking involved, Yip! nada…nothing.
What truly makes this jam a 5 star recipe on my list is the versatility in using the end product. Have it with yogurt, use it as an ice cream sauce, or as a jam to your favourite health scones, better still how about with your roast meat or drizzled over some cheese on your LCHF seed biscuit!
Chia seeds absorbs 10 times their weight in water which makes them great as a natural thickener or gel.
Chia seeds is an excellent source of Omega 3, protein, fiber and anti-oxidants and also a great addition to include into your babies diet once they start eating solids. It’s a soft seed that has no taste that could easily be incorporated into your babies diet, mixed with their vegetables or fruit puree or in custard or yogurt. For babies 4-6 months use 1/2 teaspoon daily, for babies 6-12 months use 1 teaspoon daily and for toddlers 12-5 years use 2 teaspoons daily.

- 2 cups fresh or thawed frozen berries of choice
- (I’ve use 1 cup mixed frozen berries (thawed) and 1 cup fresh strawberries)
- 2 tsp Chia seeds
- 1 Tbsp *Organic Honey or sweetener of choice
- Place berries in a food processor with the honey or sweetener of choice and process to the consistency you prefer.
- Add Chia seeds and place in a clean glass jar with a lid in the refrigerator overnight or at least 2 hours to allow the Chia seeds to absorb the fruit juices. For a thicker consistency you can add another tsp Chia seeds.
- This jam will keep fresh for up to a week in the fridge. The recipe can easily be halved for smaller quantities.
Fruit is naturally sweet therefore you could remove the honey or sweetener completely if you feel like it. If you plan to give this to your baby don’t add any honey as it could be dangerous for babies under a 1 year of age.
Honey can contain a spore of bacterium called Clostridium botulinum. This can cause a rare form of food poising in babies.
